- 4 large eggs
- 1 medium zucchini, grated
- 1/2 cup shredded cheese (such as mozzarella or feta)
- 1/4 cup milk
- 1/4 cup chopped onion
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add the grated zucchini to the skillet and cook for about 3-4 minutes until softened.
- Pour the egg mixture over the zucchini and onion, and sprinkle the cheese on top.
- Cook on the stovetop for 2-3 minutes until the edges start to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is fully set and golden on top.
- Let it cool slightly before slicing and serving.
Notes
- Feel free to add other vegetables or herbs for extra flavor.
- This frittata can be served warm or at room temperature.
