Description

Ingredients

  • 4 large eggs
  • 1 medium zucchini, grated
  • 1/2 cup shredded cheese (such as mozzarella or feta)
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the grated zucchini to the skillet and cook for about 3-4 minutes until softened.
  5. Pour the egg mixture over the zucchini and onion, and sprinkle the cheese on top.
  6. Cook on the stovetop for 2-3 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is fully set and golden on top.
