Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the grapefruit zest and chopped thyme, mixing until well combined.
- Gradually add the flour and salt, mixing until a dough forms.
- Roll the dough into a log shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Slice the chilled dough into 1/4 inch thick rounds and place them on a baking sheet lined with parchment paper.
- Sprinkle the tops with granulated sugar.
