Description

A delicious and vibrant dish featuring marinated steak served over a bed of rice and topped with fresh cilantro and lime for a zesty flavor boost.


Ingredients

  • 1 lb flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • Additional cilantro for garnish

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the steak for about 5-7 minutes on each side, or until desired doneness.
  5. Let the steak rest for a few minutes before slicing it thinly.
  6. In bowls, layer cooked rice, black beans, corn, and sliced steak.
  7. Top with avocado slices and additional cilantro.
  8. Serve with lime wedges on the side.
