Description

A hearty and flavorful beef stew that brings a touch of magic to your dinner table.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the onions and garlic, cooking until softened.
  4. Add the tomato paste, thyme, rosemary, salt, and pepper, stirring to combine.
  5. Pour in the beef broth and bring to a boil.
  6. Add the carrots and potatoes, then reduce heat to low.
  7. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Adjust seasoning if necessary before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
  • This stew can be made a day in advance for better flavor.
