A creamy and comforting white lasagna soup that combines the flavors of traditional lasagna in a delicious soup form.

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey or chicken
- 4 cups chicken broth
- 1 cup heavy cream
- 8 ounces lasagna noodles, broken into pieces
- 2 cups spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sautรฉ until translucent.
- Add minced garlic and ground turkey or chicken, cooking until the meat is browned.
- Pour in the chicken broth and bring to a boil.
- Add the broken lasagna noodles and cook until al dente.
- Stir in the heavy cream, chopped spinach, and ricotta cheese until well combined.
- Remove from heat and stir in mozzarella and Parmesan cheese until melted.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add more vegetables like mushrooms or zucchini for extra flavor.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a vegetarian version, substitute ground meat with lentils or mushrooms.
