Description

A creamy and comforting white lasagna soup that combines the flavors of traditional lasagna in a delicious soup form.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey or chicken
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sautรฉ until translucent.
  2. Add minced garlic and ground turkey or chicken, cooking until the meat is browned.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the broken lasagna noodles and cook until al dente.
  5. Stir in the heavy cream, chopped spinach, and ricotta cheese until well combined.
  6. Remove from heat and stir in mozzarella and Parmesan cheese until melted.
  7. Season with salt and pepper to taste before serving.

Notes

  • Feel free to add more vegetables like mushrooms or zucchini for extra flavor.
