A delicious and easy-to-make recipe for oven-baked salmon sushi bites that are perfect for any occasion.

- 1 lb fresh salmon fillet
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, julienned
- Nori sheets, cut into strips
- Soy sauce, for serving
- Wasabi, for serving
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- Cook the sushi rice according to package instructions and let it cool.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold into the cooled rice.
- Cut the salmon into bite-sized pieces and place them on a baking sheet.
- Top each piece of salmon with a small amount of sushi rice.
- Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through.
- Assemble the sushi bites by placing a piece of salmon and rice on a strip of nori, adding avocado and cucumber.
- Roll the nori around the filling and slice into bite-sized pieces.
- Serve with soy sauce and wasabi.
Notes
- For a spicier kick, add sriracha to the salmon before baking.
- Make sure to use sushi-grade salmon for safety.
- These bites can be served warm or cold.
