Ingredients
- Whole wheat tortillas – 4
- Black beans – 1 can (15 oz), drained and rinsed
- Corn – 1 cup (fresh or frozen)
- Red bell pepper – 1, diced
- Avocado – 1, sliced
- Cherry tomatoes – 1 cup, halved
- Red onion – 1/2, finely chopped
- Fresh cilantro – 1/4 cup, chopped
- Lime – 1, juiced
- Olive oil – 1 tablespoon
- Salt – to taste
- Black pepper – to taste
Instructions
- In a large bowl, combine black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle with lime juice and olive oil, then season with salt and pepper. Mix well.
- Warm the whole wheat tortillas in a skillet or microwave.
- Spoon the filling onto each tortilla and wrap tightly.
- Serve immediately or wrap in foil for later.
Notes
- Feel free to add other vegetables like zucchini or spinach.
- These wraps can be made ahead of time and stored in the refrigerator.
