Description

A warm and comforting vegetable tortellini soup packed with fresh vegetables and delicious tortellini, perfect for any time of the year.


Ingredients

  • 2 cups vegetable broth
  • 1 cup tortellini
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 cup diced carrots
  • 1 cup chopped zucchini
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat and sauté the onion and garlic until translucent.
  2. Add the diced carrots and zucchini, cooking for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the tortellini and cook according to package instructions.
  5. Stir in the diced tomatoes, spinach, basil, oregano, salt, and pepper.
  6. Simmer for an additional 5 minutes until the spinach is wilted.
  7. Serve hot and enjoy!
