A warm and comforting vegetable tortellini soup packed with fresh vegetables and delicious tortellini, perfect for any time of the year.
Ingredients

- 2 cups vegetable broth
- 1 cup tortellini
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 cup diced carrots
- 1 cup chopped zucchini
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat a little oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced carrots and zucchini, cooking for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the tortellini and cook according to package instructions.
- Stir in the diced tomatoes, spinach, basil, oregano, salt, and pepper.
- Simmer for an additional 5 minutes until the spinach is wilted.
- Serve hot and enjoy!
Notes
- Feel free to add any other vegetables you have on hand.
- This soup can be stored in the refrigerator for up to 3 days.
- For a creamier soup, add a splash of cream or milk before serving.
