Ingredients
- Brussels sprouts – 1 lb
- Carrots – 1 lb
- Green beans – 1 lb
- Sweet potatoes – 2 large
- Olive oil – 1/4 cup
- Garlic – 4 cloves
- Fresh herbs (thyme, rosemary) – 2 tbsp each
- Salt – to taste
- Pepper – to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and chop the Brussels sprouts, carrots, and green beans.
- Peel and cube the sweet potatoes.
- In a large bowl, combine all the vegetables with olive oil, minced garlic, fresh herbs, salt, and pepper.
- Spread the mixture evenly on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
- Serve warm as a side dish for Thanksgiving dinner.

- Feel free to add other seasonal vegetables like squash or parsnips.
- For a vegan option, ensure the olive oil is used instead of butter.
