Description

Ingredients

  • Brussels sprouts – 1 lb
  • Carrots – 1 lb
  • Green beans – 1 lb
  • Sweet potatoes – 2 large
  • Olive oil – 1/4 cup
  • Garlic – 4 cloves
  • Fresh herbs (thyme, rosemary) – 2 tbsp each
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the Brussels sprouts, carrots, and green beans.
  3. Peel and cube the sweet potatoes.
  4. In a large bowl, combine all the vegetables with olive oil, minced garlic, fresh herbs, salt, and pepper.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast in the oven for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
