Description

Ingredients

  • 1 cup mushrooms, chopped
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 cup cream cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. Peel and grate the potatoes, then squeeze out excess moisture.
  3. In a bowl, mix the grated potatoes with olive oil, salt, and pepper.
  4. Press the potato mixture into muffin tins to form nests.
  5. Bake the nests for 20-25 minutes until golden and crispy.
  6. In a skillet, sautรฉ the mushrooms and mixed vegetables until tender.
  7. In a bowl, combine the sautรฉed vegetables with cream cheese and shredded cheese.
  8. Fill each potato nest with the creamy cheese filling.
  9. Return to the oven and bake for an additional 10 minutes.
  10. Garnish with chopped green onions before serving.
