Description

Delicious and fluffy vegan sweet potato waffles that are perfect for breakfast and will satisfy your cravings every morning.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup flour (whole wheat or all-purpose)
  • 1 cup almond milk (or any plant-based milk)
  • 2 tablespoons maple syrup
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil (melted)

Instructions

  1. In a large bowl, combine the mashed sweet potatoes, almond milk, and maple syrup.
  2. In another bowl, mix the flour, baking powder, cinnamon, nutmeg, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Fold in the melted coconut oil.
  5. Preheat your waffle iron and lightly grease it if necessary.
  6. Pour the batter into the waffle iron and cook according to the manufacturer’s instructions until golden brown.
