- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup to form the crust.
- Press the mixture into the bottom of a lined baking dish.
- Bake the crust for 10 minutes until lightly golden.
- In another bowl, whisk together lemon juice, lemon zest, cornstarch, baking powder, and salt.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool before slicing into bars.
Notes
- For a sweeter taste, adjust the maple syrup to your preference.
- Store leftovers in the refrigerator for up to a week.
- These bars can be dusted with powdered sugar before serving for an extra touch.
