Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup fresh raspberries
  • 1/4 cup powdered sugar
  • 1/2 cup cream cheese

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, melt the butter and mix in the granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a separate bowl, mash the raspberries and mix with powdered sugar and cream cheese until smooth.
  7. Pour half of the brownie batter into the prepared pan, then dollop the raspberry mixture on top.
  8. Pour the remaining brownie batter over the raspberry layer and swirl with a knife to create a marbled effect.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool before cutting into squares and serving.

Notes

  • For a more intense raspberry flavor, use raspberry puree instead of whole raspberries.
  • These brownies can be stored in an airtight container for up to 5 days.
