- 1 cup mashed sweetpotatoes
- 1 can (15 oz) white beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large bowl, combine the mashed sweetpotatoes and white beans.
- Add breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat.
- Cook the patties for about 4-5 minutes on each side, or until golden brown.
- Serve on buns with your favorite toppings.
Notes
- For a spicier kick, add some cayenne pepper to the mixture.
- These burgers can be frozen before cooking for later use.
- Serve with avocado or a yogurt sauce for added creaminess.
