Ingredients

- 2 large sweet potatoes, peeled and diced
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup shredded cheese (cheddar or your choice)
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add ground beef to the skillet, cook until browned. Drain excess fat.
- Stir in diced sweet potatoes, beef broth, paprika, salt, and pepper. Bring to a simmer.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until sweet potatoes are tender and cheese is bubbly.
- Let it cool for a few minutes before serving.
