Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Add ground beef to the skillet, cook until browned. Drain excess fat.
  4. Stir in diced sweet potatoes, beef broth, paprika, salt, and pepper. Bring to a simmer.
  5. Transfer the mixture to a baking dish and top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until sweet potatoes are tender and cheese is bubbly.
