Description

A delicious and creamy sweet potato casserole topped with a crunchy pecan and brown sugar streusel, perfect for holiday gatherings.


Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
  3. Transfer the sweet potato mixture to a greased baking dish.
  4. In a separate bowl, mix the chopped pecans with brown sugar and sprinkle over the sweet potato mixture.
  5. If desired, add mini marshmallows on top.
  6. Bake in the preheated oven for 30-35 minutes, or until heated through and the topping is golden brown.

Notes

  • For a vegan version, substitute eggs with flax eggs and use plant-based milk.
  • Can be prepared a day in advance and baked just before serving.
  • Adjust the sweetness by adding more or less brown sugar according to taste.
