Deliciously soft and fluffy cinnamon roll muffins that combine the classic flavors of cinnamon rolls with the convenience of muffins.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/2 cup brown sugar
- 1/2 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the brown sugar and cinnamon together.
- Fill each muffin cup halfway with the batter, sprinkle a layer of the cinnamon-sugar mixture, then top with more batter until the cups are about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, prepare the icing by whisking together the powdered sugar and milk until smooth.
- Once the muffins are done, let them cool for a few minutes before drizzling with icing.
Notes
- For extra flavor, add chopped nuts or raisins to the cinnamon-sugar mixture.
- Store leftovers in an airtight container at room temperature for up to 3 days.
- These muffins can be frozen for up to 2 months; thaw before serving.
