Description

Deliciously soft and fluffy cinnamon roll muffins that combine the classic flavors of cinnamon rolls with the convenience of muffins.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix the brown sugar and cinnamon together.
  6. Fill each muffin cup halfway with the batter, sprinkle a layer of the cinnamon-sugar mixture, then top with more batter until the cups are about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. While the muffins are baking, prepare the icing by whisking together the powdered sugar and milk until smooth.
  9. Once the muffins are done, let them cool for a few minutes before drizzling with icing.

Notes

  • For extra flavor, add chopped nuts or raisins to the cinnamon-sugar mixture.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • These muffins can be frozen for up to 2 months; thaw before serving.
