Description

Ingredients

  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 1/2 cups all-purpose flour

  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp salt

Instructions

  1. In a large bowl, mix together pumpkin puree, sugar, and vegetable oil until well combined.
  2. Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. If using, fold in the chopped nuts.
  6. Pour the batter into a greased crockpot.
  7. Cover and cook on low for 4-5 hours or until a toothpick inserted in the center comes out clean.
