- 1 can (15 oz) pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/2 cup chopped nuts (optional)
Instructions
- In a large bowl, mix together pumpkin puree, sugar, and vegetable oil until well combined.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in the chopped nuts.
- Pour the batter into a greased crockpot.
- Cover and cook on low for 4-5 hours or until a toothpick inserted in the center comes out clean.
- Let cool before serving. Enjoy!
Notes
- Serve with whipped cream or ice cream for added sweetness.
- Store leftovers in an airtight container in the refrigerator.
- This cake can also be made in an oven if preferred.
