- 12 large mushrooms
- 1 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup sliced black olives
- 1/4 cup diced red bell pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- In a bowl, mix together the cream cheese, mozzarella, Parmesan, garlic, parsley, black pepper, and salt until well combined.
- Stuff each mushroom cap with the cheese mixture.
- Top each stuffed mushroom with a slice of black olive to resemble an eyeball.
- Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until golden and bubbly.
- Remove from the oven and let cool slightly before serving.
