- 4 large bell peppers (any color)
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a large bowl, mix together the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff the mixture into each bell pepper.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and sprinkle cheese on top.
- Bake for an additional 10 minutes until the cheese is melted and bubbly.
- Use a knife to carve creepy faces into the sides of the peppers before serving.
