Description

Stuffed Bell Peppers with Creepy Faces are a fun and spooky treat perfect for Halloween or any festive gathering. These colorful bell peppers are filled with a delicious mixture and decorated to look like creepy faces.


Ingredients

  • 4 large bell peppers (any color)
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix together the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and sprinkle cheese on top.
  7. Bake for an additional 10 minutes until the cheese is melted and bubbly.
  8. Use a knife to carve creepy faces into the sides of the peppers before serving.
