Delicious and festive cheesecake bars perfect for Halloween celebrations.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1 cup whipped cream for topping
- Halloween-themed sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a greased 9×13 inch baking dish.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, pumpkin puree, and pumpkin spice until fully combined.
- Pour the cheesecake mixture over the crust in the baking dish.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
- Top with whipped cream and Halloween-themed sprinkles before serving.
Notes
- For a more intense pumpkin flavor, add an extra ½ cup of pumpkin puree.
- These bars can be made a day in advance for convenience.
- Store leftovers in the refrigerator for up to 3 days.
