- 1 package (9 oz) cheese tortellini
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the diced tomatoes and vegetable broth, bringing to a boil.
- Stir in the tortellini and cook according to package instructions.
- Add the fresh spinach and Italian seasoning, cooking until the spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese if desired.
Notes
- For a heartier soup, add cooked chicken or sausage.
- Can be made ahead and stored in the refrigerator for up to 3 days.
- Freezes well; just add fresh spinach when reheating.
