- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped spinach and cook until wilted, then remove from heat.
- In a bowl, mix cream cheese, mozzarella, Parmesan, sautéed spinach, Italian seasoning, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the spinach mixture.
- Place stuffed chicken breasts in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes or until chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken breasts for a few hours before stuffing.
