Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, paprika, cumin, garlic powder, onion powder, salt, and pepper.
  3. Coat the chicken breasts with the spice mixture.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. In another bowl, combine Greek yogurt, lemon juice, cucumber, cherry tomatoes, and red onion to make the creamy salad.
  6. Once the chicken is cooked, let it rest for a few minutes before slicing.
  7. Serve the sliced chicken on a plate with the creamy salad on the side.
  8. Garnish with fresh parsley before serving.
