Description

Ingredients

  • 2 cups fresh peaches, peeled and diced
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced peaches gently.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. In a separate bowl, combine brown sugar, rolled oats, cinnamon, and melted butter to make the crumb topping.
  9. Sprinkle the crumb topping over the batter in the baking dish.
  10. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool before serving.
