Description

Delicious S’mores Cupcakes that combine the flavors of graham crackers, chocolate, and marshmallows in a delightful dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, graham cracker crumbs, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. Top with additional mini marshmallows and chocolate ganache if desired.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
