Description

A creamy and delicious slow cooker soup perfect for a keto diet, featuring chicken and cream cheese.


Ingredients

  • 1 lb chicken breast
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Add the chicken broth, celery, onion, bell pepper, garlic, and Italian seasoning.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, add the cream cheese and stir until melted and combined.
  6. If desired, stir in shredded cheddar cheese before serving.
  7. Serve hot and enjoy!
