- 1 lb chicken breast
- 8 oz cream cheese
- 4 cups chicken broth
- 1 cup diced celery
- 1 cup diced onion
- 1 cup diced bell pepper
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- Place the chicken breast in the slow cooker.
- Add the chicken broth, celery, onion, bell pepper, garlic, and Italian seasoning.
- Season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, add the cream cheese and stir until melted and combined.
- If desired, stir in shredded cheddar cheese before serving.
- Serve hot and enjoy!
Notes
- For a thicker soup, blend a portion of the soup and return it to the slow cooker.
- Can be stored in the refrigerator for up to 3 days.
- Freezes well for up to 2 months.
