Description

A delicious and hearty slow cooker chicken stew that is easy to prepare and perfect for any occasion.


Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups chicken broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup celery, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat and brown the chicken thighs on both sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped onion, garlic, carrots, potatoes, and celery to the slow cooker.
  4. Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 4-5 hours.
  7. Once cooked, shred the chicken with two forks and stir back into the stew.
  8. Serve hot and enjoy!

Notes

  • Feel free to add other vegetables like peas or green beans.
  • This stew can be frozen for up to 3 months.
