Instructions
- Season the beef short ribs with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and brown the short ribs on all sides.
- Transfer the browned ribs to the slow cooker.
- Add chopped onion and minced garlic to the skillet and sauté until softened.
- Stir in beef broth, red wine, tomato paste, Worcestershire sauce, and thyme; bring to a simmer.
- Pour the mixture over the short ribs in the slow cooker.
- Cover and cook on low for 8 hours or until the meat is tender.
- Serve hot with your choice of sides.
