Description
A delicious and healthy dish featuring shredded chicken and rice stuffed into sweet orange peppers.
Ingredients

- 2 large orange bell peppers
- 1 cup cooked shredded chicken
- 1 cup cooked rice
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the orange peppers and remove the seeds.
- In a large bowl, combine shredded chicken, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Stuff the mixture into the hollowed orange peppers.
- If using, sprinkle shredded cheese on top of the stuffed peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Serve warm and enjoy!
Notes
- Feel free to customize the filling with your favorite ingredients.
- These can be made ahead of time and stored in the refrigerator before baking.
- For a spicier kick, add jalapeños or hot sauce to the filling.
