Description

A delicious and healthy dish featuring shredded chicken and rice stuffed into sweet orange peppers.


Ingredients

  • 2 large orange bell peppers
  • 1 cup cooked shredded chicken
  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the orange peppers and remove the seeds.
  3. In a large bowl, combine shredded chicken, cooked rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
  4. Stuff the mixture into the hollowed orange peppers.
  5. If using, sprinkle shredded cheese on top of the stuffed peppers.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
  8. Serve warm and enjoy!

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • These can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier kick, add jalapeños or hot sauce to the filling.
