Description

A refreshing and vibrant seafood salad that combines a variety of fresh seafood with crisp vegetables and a zesty dressing.


Ingredients

  • 1 cup shrimp, peeled and deveined
  • 1 cup scallops
  • 1 cup crab meat
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cucumber, diced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot of boiling water, cook the shrimp and scallops until they are opaque, about 3-4 minutes. Drain and let cool.
  2. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and cucumber.
  3. Add the cooled shrimp, scallops, and crab meat to the bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • Feel free to add other seafood like mussels or calamari.
