Ingredients

- 1 cup shrimp, peeled and deveined
- 1 cup scallops
- 1 cup crab meat
- 2 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup cucumber, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a pot of boiling water, cook the shrimp and scallops until they are opaque, about 3-4 minutes. Drain and let cool.
- In a large bowl, combine the mixed greens, cherry tomatoes, red onion, and cucumber.
- Add the cooled shrimp, scallops, and crab meat to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
- Feel free to add other seafood like mussels or calamari.
- For a spicier kick, add diced jalapeรฑos or a dash of hot sauce.
- This salad can be made a few hours in advance; just keep the dressing separate until serving.
