Ingredients
- Green beans – 1 pound

Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- In a large bowl, toss the sweet potatoes with olive oil, brown sugar, cinnamon, and a pinch of salt.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- Meanwhile, in a skillet, heat butter and olive oil over medium heat.
- Add minced garlic and sautรฉ until fragrant.
- Add green beans, salt, and pepper, and cook until tender-crisp, about 5-7 minutes.
- Stir in fresh herbs and cook for an additional minute.
- If using, sprinkle marshmallows over the sweet potatoes and return to the oven for 5 minutes until golden.
- Serve the green beans alongside the roasted sweet potatoes.
Notes
- Feel free to add other vegetables to the green beans, such as almonds or bacon for extra flavor.
- For a vegan option, substitute butter with vegan butter.
