  • Green beans – 1 pound
  • Garlic – 4 cloves, minced

  • Butter – 2 tablespoons
  • Fresh herbs (thyme, rosemary) – 1 tablespoon each, chopped
  • Sweet potatoes – 2 large, cubed
  • Brown sugar – 2 tablespoons
  • Cinnamon – 1 teaspoon
  • Marshmallows – 1 cup (optional)

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the sweet potatoes with olive oil, brown sugar, cinnamon, and a pinch of salt.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. Meanwhile, in a skillet, heat butter and olive oil over medium heat.
  5. Add minced garlic and sautรฉ until fragrant.
  6. Add green beans, salt, and pepper, and cook until tender-crisp, about 5-7 minutes.
  7. Stir in fresh herbs and cook for an additional minute.
  8. If using, sprinkle marshmallows over the sweet potatoes and return to the oven for 5 minutes until golden.
  9. Serve the green beans alongside the roasted sweet potatoes.

Notes

  • Feel free to add other vegetables to the green beans, such as almonds or bacon for extra flavor.
  • For a vegan option, substitute butter with vegan butter.
