Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until well combined.
  5. Transfer the mixture to a greased baking dish.
  6. Top with mini marshmallows.
  7. Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown.
