Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add brown sugar, granulated sugar, milk, melted butter, eggs, vanilla extract, and salt to the mashed sweet potatoes. Mix until smooth.
