A delicious and easy recipe for roasted sweet potatoes tossed in garlic and parmesan cheese, perfect as a side dish.

- 2 large sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
Instructions
- Preheat the oven to 425ยฐF (220ยฐC).
- In a large bowl, combine the cubed sweet potatoes, olive oil, minced garlic, salt, pepper, and thyme.
- Toss until the sweet potatoes are evenly coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
- Remove from the oven and sprinkle with grated parmesan cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
- For extra flavor, add a pinch of cayenne pepper for heat.
- Make sure to cut the sweet potatoes into uniform pieces for even cooking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
