Description

A delicious roasted chicken recipe infused with the rich flavors of wine, perfect for a family dinner or special occasion.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 1 cup white wine
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • Fresh herbs (such as rosemary and thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Stuff the cavity of the chicken with lemon halves and fresh herbs.
  5. Place the chicken in a roasting pan and pour the white wine around it.
  6. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.

Notes

  • For extra flavor, marinate the chicken in wine and herbs overnight.
  • Serve with roasted vegetables or a fresh salad.
