Description

A delightful and savory dish combining rice, spinach, and salmon wrapped in flaky puff pastry.


Ingredients

  • 1 cup cooked rice
  • 2 cups fresh spinach, chopped
  • 1 can (14.75 oz) salmon, drained and flaked
  • 1 sheet puff pastry, thawed
  • 1/2 cup cream cheese, softened
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
  3. In a bowl, combine cooked rice, sautéed spinach, flaked salmon, and cream cheese. Season with salt and pepper.
  4. Roll out the puff pastry on a floured surface and cut into squares.
  5. Place a spoonful of the salmon mixture in the center of each pastry square.
  6. Fold the pastry over to form a triangle and seal the edges with a fork.
  7. Brush the tops with beaten egg.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown.
  9. Let cool slightly before serving.

Notes

  • For a vegetarian option, substitute salmon with cooked mushrooms or tofu.
  • Serve with a side salad for a complete meal.
