- 1 cup cooked rice
- 2 cups fresh spinach, chopped
- 1 can (14.75 oz) salmon, drained and flaked
- 1 sheet puff pastry, thawed
- 1/2 cup cream cheese, softened
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted.
- In a bowl, combine cooked rice, sautéed spinach, flaked salmon, and cream cheese. Season with salt and pepper.
- Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of the salmon mixture in the center of each pastry square.
- Fold the pastry over to form a triangle and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
Notes
- For a vegetarian option, substitute salmon with cooked mushrooms or tofu.
- Serve with a side salad for a complete meal.
- Can be made ahead and frozen before baking.
