- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium carrot, diced
- 1 medium potato, peeled and diced
- 4 cups vegetable broth
- 1 tablespoon olive oil

- Juice of 1 lemon
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced carrot and potato, cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until the vegetables are tender, about 10 minutes.
- Add fresh spinach and cook for an additional 5 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in lemon juice and season with salt and pepper to taste.
