Description

A delicious twist on the classic Reuben sandwich, this Reuben Layered Bake combines layers of corned beef, sauerkraut, Swiss cheese, and a creamy dressing, all baked to perfection.

Ingredients

Scale
  • 1 lb corned beef, sliced
  • 2 cups sauerkraut, drained
  • 2 cups Swiss cheese, shredded
  • 1 cup Russian or Thousand Island dressing
  • 1 loaf rye bread, cubed
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a greased baking dish, layer half of the cubed rye bread.
  3. Top with half of the corned beef, followed by half of the sauerkraut and half of the Swiss cheese.
  4. Drizzle half of the dressing over the layers.
  5. Repeat the layers with the remaining ingredients.
  6. Pour the melted butter over the top layer.
  7. Bake for 30-35 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

  • For a vegetarian option, substitute corned beef with a plant-based alternative.
  • Ensure the sauerkraut is well-drained to avoid excess moisture.
  • This dish can be prepared ahead of time and baked just before serving.
