- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1 tablespoon Dijon mustard
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a bowl, mix together the corned beef, sauerkraut, Swiss cheese, and Dijon mustard.
- Lay an egg roll wrapper on a clean surface and place a spoonful of the mixture in the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly.
- Heat oil in a deep pan over medium heat.
- Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve hot with your favorite dipping sauce.
Notes
- Make sure to drain the sauerkraut well to avoid soggy egg rolls.
