Description

Reuben Egg Rolls are a creative and delicious twist on the classic Reuben sandwich, featuring corned beef, sauerkraut, and Swiss cheese wrapped in crispy egg roll wrappers.

Ingredients

Scale
  • 1 cup corned beef, shredded
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 tablespoon Dijon mustard
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a bowl, mix together the corned beef, sauerkraut, Swiss cheese, and Dijon mustard.
  2. Lay an egg roll wrapper on a clean surface and place a spoonful of the mixture in the center.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly.
  4. Heat oil in a deep pan over medium heat.
  5. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with your favorite dipping sauce.

Notes

  • Make sure to drain the sauerkraut well to avoid soggy egg rolls.
  • These can be baked instead of fried for a healthier option.
  • Serve with Thousand Island dressing for dipping.
