- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- ½ cup sour cream
- ¼ cup blueberry puree
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract, sour cream, and blueberry puree until well combined.
- Gently fold in the fresh blueberries.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Let it cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
- For a more intense blueberry flavor, add more blueberry puree.
- Serve with additional fresh blueberries on top for garnish.
- This cheesecake can be made a day in advance for better flavor.
