- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup rice, uncooked
- 2 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped bell peppers, onion, and garlic to the skillet and sautรฉ until the vegetables are tender.
- Stir in the diced tomatoes, rice, beef broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
- Fluff with a fork and serve hot.
