Description

Delicious and easy-to-make pumpkin spice cupcakes using cake mix, perfect for fall celebrations.


Ingredients

  • 1 box of spice cake mix
  • 1 cup canned pumpkin puree
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large mixing bowl, combine the spice cake mix, pumpkin puree, water, vegetable oil, eggs, pumpkin pie spice, and vanilla extract.
  3. Mix until well combined and smooth.
  4. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  5. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
