- 1 box of spice cake mix
- 1 cup canned pumpkin puree
- 1/2 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large mixing bowl, combine the spice cake mix, pumpkin puree, water, vegetable oil, eggs, pumpkin pie spice, and vanilla extract.
- Mix until well combined and smooth.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
