Delicious and healthy pumpkin oatmeal cookies that are perfect for a snack or dessert.

- 1 cup pumpkin puree
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, brown sugar, and honey until well combined.
- Add the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt to the mixture and stir until just combined.
- If desired, fold in raisins or chocolate chips.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to a week.
- For a vegan option, replace honey with maple syrup.
- Feel free to add nuts or seeds for extra crunch.
