Description

Delicious and healthy pumpkin oatmeal cookies that are perfect for a snack or dessert.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, brown sugar, and honey until well combined.
  3. Add the rolled oats, whole wheat flour, baking soda, cinnamon, nutmeg, and salt to the mixture and stir until just combined.
  4. If desired, fold in raisins or chocolate chips.
  5. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a vegan option, replace honey with maple syrup.
  • Feel free to add nuts or seeds for extra crunch.
