- 1 can (15 oz) pumpkin puree
- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef or turkey over medium heat.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the pumpkin puree, diced tomatoes, black beans, kidney beans, and vegetable broth.
- Add the chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
- Serve hot, garnished with your favorite toppings.
Notes
- For a vegetarian version, omit the meat and use additional beans or lentils.
- Adjust the spices according to your heat preference.
- This chili can be made ahead of time and tastes even better the next day.
