- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease a 9×13 inch baking pan.
- In a large bowl, mix together pumpkin puree, sugar, vegetable oil, and eggs until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- While the bars are baking, prepare the cream cheese frosting by beating together cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Once the bars are cool, spread the cream cheese frosting evenly over the top.
- Cut into squares and serve.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- These bars can be frozen for up to 3 months without frosting.
- For added flavor, consider adding chopped nuts or chocolate chips to the batter.
