These Patriotic Mini Cheesecakes are a delightful and festive dessert perfect for celebrating national holidays. They are easy to make and visually appealing with their red, white, and blue layers.

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup whipped cream
- 1/2 cup blueberries
- 1/2 cup strawberries, sliced
- 1/2 cup graham cracker crumbs
- 2 tbsp melted butter
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of mini cheesecake cups.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Fold in whipped cream until well combined.
- Divide the cheesecake mixture into three bowls.
- In one bowl, add blueberries and mix; in the second bowl, leave it plain; in the third bowl, add sliced strawberries and mix.
- Layer the mixtures in the mini cups starting with the blueberry layer, then the plain layer, and finally the strawberry layer.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- These can be made a day in advance for convenience.
- Garnish with additional berries before serving for a fresh look.
