- 2 pounds baby potatoes, halved
- 1/4 cup pesto
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, olive oil, salt, and pepper. Toss to coat.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- Remove from the oven and toss with pesto and grated Parmesan cheese.
- Return to the oven for an additional 5 minutes to melt the cheese.
- Serve warm and enjoy!
