Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease a muffin tin.
  2. In a mixing bowl, cream together the butter, honey, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange juice, orange zest, and grated ginger.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
