Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease a muffin tin.
- In a mixing bowl, cream together the butter, honey, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the orange juice, orange zest, and grated ginger.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
