Description

Ingredients

  • 8 oz pasta of choice
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add mixed vegetables and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add pasta and Italian seasoning, then reduce heat to a simmer.
  6. Cook until pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.
