Ingredients

- 8 oz pasta of choice
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add mixed vegetables and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add pasta and Italian seasoning, then reduce heat to a simmer.
- Cook until pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
